This is one of my favorite go-to meals when a) I’m low on available calories or carbs for the day, or b) I’m just home from the gym. Excellent mix of protein and fat as-is, with a double dose of low-carb veggies and it’s a must for any diabetic diet! (CAUTION: This recipe does not account for the piece of buttered toast in the photo. You’ll need to add the nutritional info for that to your tracker if you’re watching carbohydrates!)
Now, depending on your nutritional requirements each day, you can add in a little cheddar cheese either right before the egg is done cooking, or sprinkle some shredded on top at the end.
This is such an amazingly healthy, filling-but-not-bad-for-you meal! I’ve been known to eat it any time of day, but especially when the family is craving something that’s bad for my diet… because this baby goes from prep to your mouth in 7 minutes flat!
